A new gastronomic destination is set to enhance the flavours of traditional tastes. Buro 24/7 Middle East has the details...

Atlantis, The Palm will open Ayamna, its new Lebanese dining concept. Ayamna, which translates to the 'good old days' in Arabic, is a restaurant set to celebrate modern culinary twists, while still extracting full traditional flavours from the popular Lebanese cuisine.

Ayamna's interior setting

"I'm from Zahle and the area is very famous for mezze and lots of traditional Arabic food, so I definitely try and incorporate this into my cooking," said Executive Chef, Ali Elbourji. "That said, I like to add to or evolve certain dishes as long as the change complements the core ingredients."

Lebanese cuisine at Ayamna

Amidst the lush setting of opulent décor, a vibrant open kitchen as well as relaxing terraces, guests can indulge in reimagined classical dishes including the baked lobster with creamy cheese and the knaffe prawns. Even the humble hummus and halloumi have been given a new age twist to ensure a memorable dining experience.

Ayamna will open in March 2017 at Atlantis, The Palm. For more information, visit
