This year’s list of world's top 50 restaurants sees Europe keeping its haute cuisine crown with bronze, silver and gold positions going to continental venues. Although the Nordic winner from the past three years of the 'S.Pellegrino World's 50 Best Restaurants', Noma, is getting the cold shoulder from the warmer climes of Spain and Italy as first and second place are awarded to El Celler de Can Roca of Girona, Spain, and Modena’s Osteria Francescana, respectively. 

Denmark’s Noma has enjoyed top billing four non-consecutive times, whilst El Celler de Can Roca enjoyed the number spot in 2013. Spain features consistently throughout the list, emerging as its own culinary superstar in the global list that also sees France cling onto its gastronomical reputation.

El Celler de Can Roca of Girona, Spain 

Just 60 miles north of Barcelona in the Catalonian province, the three Michelin star restaurant – El Celler de Can Roca (pictured above) is run by the Roca brothers: Joan (head chef), Josep (sommelier) and Jordi (in charge of desserts), each of whom is thought of as a master in their field. Specialities include meat disguised as fish and desserts that pulsate as if alive. The waiting list is so long that if you are planning to dine here, you might as well book now for a table for two at 8.30pm in 2020.

Modena’s Osteria Francescana, Italy

Helmed by chef Massimo Bottura, who is considered a leading figure among a new generation of Italian chefs, Modena’s Osteria Francescana also enjoys the honour of holding three Michelin stars. Set in the Emilia-Romagna region of Italy, in the north, in the centre of a triangle whose corners are Florence, Milan and Venice, chef Bottura knows how to take the stunning local ingredients and whip them into progressive, imaginative and creative culinary delights.

With seasonality at its very core, Noma (pictured above) boasts its harvests on the menu with items such as “the first garlic of 2015” to highlight it’s impeccable sourcing. One imagines the kitchen team foraging in the Danish wilderness for the berries from the “berries and greens soaked in vinegar for one year” or diving for the freshest seaweed in the icy waters to make the “Asparagus, berries and seaweed.” Noma certainly pushes the boundaries of flavour combinations.
