Gastronomy is in the spotlight once again in the UAE with three exclusive culinary adventures that are as diverse as they are sumptuous. Specially curated by three master chefs, connoisseurs can expect an explosion of flavours ranging from Asian cuisine and seafood dishes to an exquisite showcase of sustainable cooking.
Chef Norbert Niederkofler at Mezzaluna
Italian chef Norbert Niederkofler completes the trilogy – after Karlheinz Hauser and Hendrik Yde Andersen – in Emirates Palace's special Michelin culinary series. As head of the two-starred Michelin star St. Hubertus in Tyrol, Italy, Niederkofler is renowned for his 'Cook the Mountain' philosophy, opting for a sustainable cooking method where he uses ingredients exclusively from the surrounding Dolomite mountains. "We use 25 different kinds of carrots throughout the year and an almost endless variety of herbs including amaranth leaves, sorrel, wild onion and celeriac," he said. "The most natural ingredients are the most important." No at Emirates Palace, diners can indulge in a five or seven-course menu that includes some of his signature dishes including fresh trout, beetroot gnocchi, eel and chamomile and tarte tatin.

Chef Giorgio Diana at L'Olivo Ristorante
With unquestionable culinary pedigree, Giorgio Diana honed his cooking style and discerning palette under the tutelage of some of the world's best chefs and later earned him the title of the youngest chef to ever earn a Michelin star at age 24. He brings to Dubai a special six-course dinner menu that will elevate the senses of both seafood and meat lovers at L'Olivo Ristorante. "The exquisite science of cooking has always excited me," said Diana. "The Mediterranean flavours I was exposed to as a child has stuck with me to date. I also really enjoy molecular gastronomy and it gives me great delight to serve my guests with unique and revolutionary dishes."

Chef Mansour Memarian at Shang Palace
With the aim of showcasing the underappreciated cooking techniques of Chinese cuisine, Executive Chef of Shangri-La Hotel, Qaryat Al Beri, Abu Dhabi, Mansour Memarian has curated two special menus that are a feast for both tastebuds and the eyes: Quack Attack and Yu for Yu. The Quack Attack menu includes a duck-based roll, soup and main course all cooked in a trio of styles but more importantly, the rolls are prepared at the table to highlight the skilled process behind the delightful dish. Meanwhile, the Yu For Yu menu is a fish-based dish that is brought out to the table in the very same pan in which it was cooked, to fully allow a burst of intense flavours.
