Celebrated Pâtissière, Hermé coined the expression 'haute-pâtissèrie.' His process of creation is not unlike that of the legendary designer, and his successors. Just like any designer these dessert creations are sketched and planned, before they are created and presented, they are every bit the masterful designs as the house of Dior would warrant.
